I think that autumn has one shortcoming, fruit! Apples, pears, plums are good but not as good as strawberries or blueberries 🙂 But of course we do not turn our back to them, with these fruits it is also possible to make delicious desserts. I discover a new one each year.

More Apples Than I Can Imagine

Especially because the apple is widely grown in Europe, you can discover a new apple dessert in almost every city. In Germany, for example, the apple grows in all 4 seasons and has more than 2,000 kinds. They can also be divided into groups such as for raw eating, roasting or baking 🙂

Although the dessert is the same, the presentation and eating habits may vary according to the cities.

Apple Pie Has The First Place

For example, there is the apple pie, which you can find anywhere in Europe. But there are incredible differences in shape and presentation. In the region where I live, for example, served warm, when you go further west you have to eat cold. I also read that the apple pie’s home country is Netherlands, but although I have been there several times, I haven’t tried it yet. My bad 🙂

My Favourite: Apple Strudel

Or the apple strudel, which is an Austrian dessert. I love it!

They wrap the apples in a thin dough, bake and serve warm. Of course not only in Austria, but also in many parts of Germany you can find this delicious dessert. I think the best is in the southern region, which is close to Austria, also served hot and with vanilla ice cream, which is definitely my favorite. Of course, I tried it also at home and had a satisfying taste, but since it contains a lot of wheat and sugar, I am not making it so often, as you might guess 🙂

An Autumn Reminder

For me the apple is still an autumn fruit, this is when it comes to my mind so often. What could be better suited to the autumn kitchen than the smell of cinnamon-baked apples?

Getting Healthier

Trying to stay away from apple strudel, I also looked for new recipes to make with apples and made a very delicious cake, using unrefined sugar and healthier flour. It is also vegan, no place for eggs and dairy products. Yes, we need to stay away from sugar but we can at least make such healthy desserts to indulge ourselves. Try this cake is clean, doesn’t make you regret, doesn’t bloat.

Vegan apple cake

Try it, I am sure you will fall in love with it!

Vegan apple cake:

  • 2 medium apples
  • 1 teaspoon cinnamon
  • 2 tablespoons raisin
  • 1/4 cup hot water
  • 1 tea spoon vanilla extract

Dice the apples and cook them all together on medium heat. When cooked:

  • 3/4 cup coconut milk
  • 1,5 tablespoon starch

Mix them together and add to apples. Let it cook a couple of minutes until thickens.

In the meantime;

  • 3 tablespoon chia
  • 8 big dates
  • · 9 tablespoons hot water

Let them sit together for 10 minutes. While they soften:

  • 1/4 cup almond meal
  • 1/2 cup coconut flour
  • 1/4 cup melted coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Mix them all together. Blend the chia-date mixture and add to form a dough.

Press into a baking form. Then add the apple mixture. Add some almonds on top.

Bake in preheated oven at 150 degrees for 25 minutes. Wait until totally cooled to remove from the pan and slice, if you can wait 😉
