Eating Healthy Is Not That Hard

As I wrote in the “about me” part, seeing how easy it actually can be, is a reason to start a healthy diet right now.

To fill the plates with plenty of vegetables, to consume fruit “responsibly”, to lower carbs in our diet is actually not hard at all.

Healthy Diet To Improve The Life Quality

The point where many scientists get together is that; a vegetable-rich, healthy fat-rich and low-carbohydrate diet improves the quality of life. Doesn’t it worth bit of a challenge for that?

And here, I have a recipe that will make eating healthy more enjoyable. It is maybe not that easy, but definitely a very nice alternative for special occasions. It contains plenty of vegetables, and low in carbs. It also does not contain any animal products but the “cheese” sauce on it is incredibly delicious! Suitable for each meal, our new breakfast special. But I’m sure it is enjoyable even for a romantic dinner.

The Healthy Crust:

– 3 tablespoons ground flaxseed + 9 tablespoons of water (these are mixed and left sit for 10 minutes)

– 1 + 1/4 cups of almond flour

– 8 tablespoons coconut flour

– 1 tablespoon of psyllium seed husk powder

– 1 tablespoon sesame seeds

-3/4 cups water

– Salt, garlic powder

We get a dough mixing all the ingredients. It should be is lightly crumbly but must stick together when pressed. Spread it by pressing into a quiche form. It is important that the dough is distributed evenly.

Filling:

– Florets of 500 gr broccoli

– 400 grams of mushrooms

– 2 carrots

The inner filling can actually be any season vegetables you want. Everything fits in this delicious crust. It just needs to be enough to fill it J

Wash and chop the vegetables, sauté and season with salt and your favourite spices. I do not use any oil because there is enough fat in the crust, but you can make additions like olive oil or tomato paste according to your taste. The kitchen is our playground, so feel free! Fill the crust with the cooked vegetables.

”Cheese” sauce:

– 1 cup of vegetable broth

– 2/3 cups of chickpea flour

– 2/3 cups of plant milk (or water)

– Salt, pepper, a little turmeric

– 1 teaspoon of nutritional yeast (this gives the cheesy taste, better not to omit)

Bring the vegetable broth on the oven. While it heats up, whisk the almond milk, spices, yeast and chickpea flour in a separate bowl until it becomes smooth. Turn down the heat of the boiling broth and slowly add chickpea flour mix, and continue to mix. This sauce is going to get thick quickly. Cook for 2 -3 minutes, and spread all over the cooked vegetables with a spoon.

Some Decoration

I used cherry tomatoes cut in half to decorate. But you can easily try other things you want. Not to add anything on top is also an option!

175 Degrees, 25 Minutes

At the end, bake in preheated oven at 175 degrees, basically until the cheese sauce on top is golden brown. Mine took about 25 minutes, but may vary depending on the oven. I recommend you to let it cool a bit before slicing, because the crust tends to fall apart when still hot.

I serve this dish, with a little parsley and appeal to both the eye and the palate.
