Apple Cookie Recipe | Gluten-free and Sugar-free

We’ve all been there. You’re feeling like you deserve a treat. Then you go into the kitchen and start preparing a batch of cookies or brownies. You have all the ingredients gathered together. Suddenly you realize you’ve forgotten the one thing that’s necessary for your favorite recipe—the sugar. That is how I created this apple cookie recipe!

Gluten-free baking can be difficult as it is. Without sugar to help the flavor of some recipes come through: it is even harder. Some people believe that there’s no reason to exclude gluten-free cooking from their diet. Because they can just switch out traditional ingredients for gluten-free alternatives instead. The problem with this reasoning is that some gluten-free alternatives may not provide the same taste or texture as traditional ingredients do. That might make your dish less appetizing in comparison.

I created this gluten-free apple cookie recipe. When trying to use the last apples before going on holiday, and before each one, I tried to upgrade the recipe to find the perfect cookies!

Now I found definitely the best one!

  • 2 medium apples, grated
  • 2 tablespoon chia seeds
  • 5 tablespoon tahini
  • 1 teaspoon cinnamon
  • 2/3 cup raisins
  • 1 cup oats
  • 1/4 cup almond milk

Mix everything and let the mixture sit for 10 minutes.

Then make medium-sized balls and cook them in preheated oven at 180 degrees for 35 minutes.

Let them cool completely and let your tastebuds have a party!
