When you first wake up, all you can think about is the day ahead. You want to have a lot of energy and be ready for it. But that’s easier said than done when it comes to eating and cooking breakfast. That is why you need some easy vegan breakfast ideas.

You need high-quality carbs, protein, and enough vitamins and minerals to power your body up. And if you’re vegan or vegetarian then you need easy vegan breakfast ideas. So what can vegans eat for breakfast? There are plenty of options out there – these 6 ideas are just the start!

Seed Crackers with Avocado

With the removal of milk products (including eggs and delicatessen products if you are vegan) as protein and bread as carbs, the remaining energy source is fats and I eat plenty of healthy fats in these breakfasts. Avocado, nuts, and seeds are the best for breakfast.

One of my favorites is the seed crackers with avocado and fresh vegetables. Very tasty and keeps you full for a long time.

Vegan Granola

The second one, those who do not have a very strict diet can also choose granola and fruits. Very tasty, but unfortunately keeps you full shorter.

The vegan granola is also quite easy to make. Instead of butter, you can add coconut oil. You can replace honey with maple syrup or grated apple.

Vegan Bread

What if you’re missing the bread so much as a vegan?

I also found a solution for this, after a few attempts to make low-carb bread. I figured out bread with very low carbs and filled with healthy fats, protein, and fiber. This is my breakfast hero!

Spread On Bread

Ok, we have the bread now. But without butter, cheese, honey, what will be spread on it? Here comes my favorite trio: Avocado, tahini with molasses, and my dried tomato paste.

Tahini with molasses and avocado are already well-known, but I’ll briefly describe the dried tomato paste. It’s very tasty! Set 6-7 whole dried tomatoes in the hot water until soften. Then add 4 walnuts, 1-2 spoons of olive oil, a pinch of oregano, and blend.

Voilà, it’s ready! Of course, other spices can be added according to taste.

Vegan Cheese

And we have a cheese problem, unfortunately. I’m trying to solve this with nut-cheese, but I couldn’t get the taste I wanted yet.

The picture below shows in the top left corner the cheese I made from the hazelnut pulp. It’s far from the traditional cheese but a different option for breakfast. Finding vegan cheese in the grocery stores is pretty easy here in Germany, but if you look at the ingredients, you see that they are filled with tons of chemicals that you won’t understand. I think it would be much healthier to eat normal ones instead of these.

Vegetables for Vegan Breakfast Ideas

Of course, vegetables are a must in this diet. Sautéed spinach is my favorite, but everything we normally add to omelets is actually suitable for breakfast. Mushrooms and red bell peppers are also perfect. If you have it at home, you can also add some sprouts to increase nutritional value. I find beluga lentil sprouts the best.
